With the release of the Q9450, I've rethought my previous build. Here's what I am currently thinking:
Antec Nine Hundred Case
Intel Core 2 Quad Q9450 Yorkfield 2.66GHz LGA 775 95W Quad-Core Processor
Arctic Cooling Freezer 7 Pro 92mm CPU Cooler
ABIT IP35 Pro LGA 775 Intel P35 ATX Intel Motherboard
PC Power & Cooling S75QB EPS12V 750W Power Supply
EVGA 512-P3-N841-AR GeForce 8800GTS (G92) 512MB 256-bit GDDR3 PCI Express 2.0 x16 HDCP Ready SLI Supported Video Card
Crucial Ballistix 4GB(2 x 2GB) 240-Pin DDR2 SDRAM DDR2 800 (PC2 6400) Dual Channel Kit Desktop Memory Model
Western Digital Caviar SE16 WD6400AAKS 640GB 7200 RPM SATA 3.0Gb/s Hard Drive
All this for under $1400.00!! Your thoughts?
My only concern is the PSU. I'm probably going to have to replace the PSU when the 98xx's start dropping if I am to ever decide to upgrade, huh? Something to do with the connectors I've read....I don't know.

I can't comment on the connectors for the 9x00's but if you're going with a single-GPU setup, you might as well save some money and drop down to the 610W PC P&C.
