Any help would be appreciated! This was my third build for my uncle.

The computer boots into Vista, runs for about a minute or two then shuts down. Runs fine in safe mode, no oc, no other programs on it, just Vista on this new build. All running at stock. No error messages.

My second build (wifes) is the same as this one and I have no problems.

Since your PC is working fine in Safe mode i assume the problem is with some driver or startup service. You are not getting the error message because your computer is configured to reboot on error. To change this behaviour uncheck the box "Automatically Restart check box" in "Startup and Recovery options". This should allow you to see the error and hopefuly the driver or service causing the failure. Refer to this link for how to set Startup and Recovery Options

http://www.web-articles.info/e/a/t [...] -in-Vista/

You could also look at the system event log to see what the error is.

Right click My Computer click Properties -> Advanced -> Startup and Recovery. Uncheck Automatically restart. It should give you a blue screen that may give you some indication as to the cause.

Also Download memtest86+ and run a memory test.

Does Vista shut down safely? Going through the shutdown/welcome screen? Or does it shut down randomly out of the blue?

Yes, Event Log would be the 1st place I look at. It's in control panel > admin. Or use Help to find where it is.

Safe shutdowns may point to software (bugs, malware, etc.) whereas random shutdowns/restarts may point to hardware (unstable bios settings, crap psu, faulty ram, etc.)
