Problems with OC my e8400

I'm trying to overclock my e8400 from 3.0 to 3.6 with a Zalmant 9500CT on a ASRock P43 1600Twins. I am running DDR2 - 800, which is clocked down to 66 to match my current 333 FSB. I want to up the FSB to 400 and then have the ram clock back up to 800. When I tried to do this with ASRocks OC software, my system froze. I then did it through the BIOS and it seemed stable, but when I checked my ratings with CPU-Z, it said I was still running at 333. Any ideas on what I can do? I would really like to avoid using the OC software, but the BIOS doesn't seem to do anything. Help!

Maybe you still have Speedstep CIE on in the BIOS, this basically is an energy saving feature and will put ur multi to 6 and therefore your CPU will run slower(maybe 333mhz)
But when you start stressing it, it will jump up to 9xmulti,

Or maybe you simply didnt save your settings when you exited your BIOS
