I know an X38 motherboard will not run SLI.  However, can I still install two Nvidia cards, each running it's own monitor not in SLI mode?  My guess is no, but I thought I would ask anyway.

Your guess is incorrect, you should be able to run two Nvidia cards just without SLI (which you already knew).

Get a 780i or 750i motherboard for the same price and you can run SLI if you like.
