Some have stated they actually get 30fps with the 4750 though, in either test
case, i'm not sure if this is with large amounts of scenery or say
across multiple monitors (3).. (mine will be across 3 lcds, 1920x1200)
See the benchmarks of HD 4870X2 too.
9800GX2 may win HD 4870 but dual GPU doesnt always work fine so my vote goes for HD 4870X2(if u can afford it) or HD 4870.

When you say dual gpu doesnt always work fine, do you mean for other games (not fsx) that aren't optimized for dual gpus? I'm guessing as time goes on, more and more will though?
Well its not always the game problems that doesnt support MultiGPU,its driver problems too,look @ HD 4870X2 its a dual gpu solution but it performs very well in almost every game.
as for motherboard,if u need CrossFire,take a look @ P5E(no need to look @ P5E3 because u can DDR2 RAMs very cheap and the difference between DDR2 and DDR3 isnt much) or look @ ASUS MAXIMUS FORMULA,because i dont think the price difference between P5E and MAXIMUS FORMULA isnt much and u will get SOLID CAPACITORS(MAXIMUS FORMULA) and a free copy of 3DMARK 06 and STALKER.

This space need seems to only be possible on the ddr3 boards.. and most have said if i went with ddr3 1333 mhz cas9 ram, i'd be at the same speed as my ddr2 1066 cas5 ram right now.. ie: throwing a little money away, but it may be the price i pay to have this capacity, unless i can still find a ddr2 board that works (no crossfire or sli needed or will be used).
