2 large LCDs w/ this nVidia 256 MB DDR3

I want to run 2 22" LCDs as an extended desktop @ 1600x1050 each. Not for gaming but for video and many work documents (like large PDF files that need to be rendered quickly without lag).

I've decided on a GeForce 8x000 series card but can't decide between 256 MB DDR3 and 512 MB DDR2. Does large resolution like mine need more memory? Or does it need fast memory/ clock speed?
