This could be one of the stupidest questions ever...but here goes...

AMD just released their 4850, which I bought, will an AMD GPU work with my new Intel CPU (E7200)?

As long as your motherboard has a PCI-E slot your good to go.

As far as chipsets go as long as you have the correct slot on the board PCIE or AGP if its an older system (obviously not in your case) then the only thing you need to worry about if you want to run more than one card is if the mobo supports SLI or Crossfire. SLI for Nvidia cards Crossfire for ATI/AMD cards. But if you dont have any plans to run more than one card then either will work.
