I bought this case http://www.newegg.com/Product/Prod [...] 6811217031 which has a lcd panel in front that displays cpu temp. On the inside is a wire with the sensor at the tip that I assume goes on the component being observed. Should I put it between the chip and the heat sink? Do I attach it to the heat sink somehow? The sensor appears to be encased in some sort of plastic so I dont know what to do with it.

It doesn't have to be used if you don't want to. You can attach it to a side near the bottom of the cpu heatsink. There should be some thermal tape. If not, get some from a store. Home Depot or computer store.
