I'm looking to purchase the Asus P5NT WS motherboard, and I'm looking to buy the proper memory, I went to the Kingston Site and got these two compatiable memories.

2GB 800MHz DDR2 Non-ECC CL5 (5-5-5-15) DIMM (Kit of 2)

or

2GB 800MHz DDR2 Non-ECC Low-Latency CL4 (4-4-4-12) DIMM (Kit of 2)

I'm not sure which one I should order, or what the difference between one and the other is.

What is the difference in price? If they're around the same price, go with the 4-4-4-12 ram. These numbers are memory timings. Basically, the lower these numbers are, the faster the memory will respond when it is asked to do something.
