How to display the times & dates of photos in windows xp

Hi,
The only way I seem to be able to get the info in windows xp is when I click on the picture.
The problem is that I want to make folders for certain days but I can't work out how to because the date & time goes away so quickly! Is there anyway to display the info under the pictures, if so how do I do this?
