Anyone know if it's possible to set up so I can sync a Palm Zire 21 and a
Zire 72 to the same PC? They use different Palm Desktop versions and carry
slightly different software apps, ie To Do versus Tasks, or Calendar versus
Datebook.

Sure it's possible. The desktop version doesn't matter much. Use the 72
desktop, and configure the conduits separately for each.
