Hi guys,
Ok i've been going nuts trying to find software that would atleast allow me to monitor and log my gigabyte radeon 4870's temperature. Everyone seems to be able to report there max temp so clearly there is a way of logging it. I've tried the catalyst overdrive screen but all i get is the idle temp because by the time my 3d app has close the temp has dropped back below 80C and reads my idle temp of 70C - 77C. Can someone please tell me how i can get my max temp.

Try GPU-Z to monitor the temps and ATI Tool's artifact scanner to put a load on the GPU.

Both GPU-Z and HWMonitor. Plenty of other light program options out there

I just left Catalyst overdrive screen open and did an ALT-TAB out of the 3D App (Game) after running for about 10 min.

Outlaw has it right. Use ATItool to scan for artifacts and monitor the temps with GPUz. It is killing two birds with one stone. You can monitor your temps in GPUz while under a full GPU load and check that you have proper overclocks.
