At the moment I've got a
E2160 1.8Ghz
Asus P5GC-MX/1333 Motherboard
2GB 667 RAM
HD4870 Video Card
550w Power Supply
Windows XP
I recently upgraded to the HD4870 and wanted a better processor to go with it. I have my eye on a E8600 3.33ghz but want to know which motherboard will be best for now, and possibly later on upgrading.
This would be the last upgrade for a while as a E8600 and HD4870 should play most game for ages (im hoping)
I am thinking the Asus P5Q PRO but there are so many to choose from I'm not sure. Whichever one I choose I want it to be able to be upgradable just incase I devide to upgrade, to maybe a quad core?

It's unlikely. The 1333mhz "oc" rating is exactly that, it doesn't support 1333mhz natively. The 945 chipset is ancient, came out long before your current cpu. Not to mention it was an economy microatx chipset even when it was still new. Even if the motherboard recognize the cpu with bios update, it's likely to end up underclocking, and you can forget about oc. It makes no sense to spend so much on an e8600 to have it underclock.
