i have an HP pavillion 760n with XP and a crashed 80G hard disk, I cant find anything less than a 250G at local stores. Am i going to run into problems upgrading to a hard disk of that size or larger?

No. HP restore disks will work fine, and there should be no issue as long as you have the conenctions for the disk type on your motherboard (the safest thing to do is to buy the same connection type (IDE or SATA).
