Am assembling my dream-PC components list for a new build (my first). Am thinking of a 128 GB SSD for OS and software, and 2, 640+ GB HDs in RAID 1 for data. I need advice on good procedure for backing up the contents of the SSD so it could be restored readily to a new SSD should the need arise.

If you're going to use Windows 7, it's built-in backup application can make a disk image and a stand-alone bootable DVD that you can use to restore the image to another drive.
