I've been looking at building a new system for a little over a year and never got around to it due to multiple reasons. This is my first ever build and I've been doing as much research as possible but there is only so much you can do before asking for help.
 
I am going to be using this computer with gaming and video editing as a primary focus so I am not concerned solely about how much fps I get, etc.
 
I am planning on using the two hard drives I selected in a raid0 array although I'm really not sure how to do it but if what I selected won't work please tell me. Planning on overclocking as well.
 
I want to keep the price of the pc under $1500. I will go over if necessary but I really want to try to keep $1500 as a max.

You have and excellent build lined up and it will server you well.  
The only thing I would think about suggesting would be to go for PC Power and Cooling for the PSU, but even that, really isn't all that necessary.

Agreed, you picked out some very good parts. That computer look like it will be awesome.

Build looks good but...
There is generally no real world(vs. synthetic transfer rate benchmarks) performance advantage to raid of any kind.

  There are some specific applications that will benefit, but
gaming is not one of them.   Even if you have an application which reads one input file sequentially, and writes
it out, you will perform about as well by putting the input on one drive, and the output on the other.

Yeah, that cosmos case, yikes, I don't think I could stomach paying for that, though it probably has its merits.
 
The only thing I would think that needs improvement is probably the heatsink, the 3 I hear are good for low, mid and high range are the Arctic Freezer 7 for low (maybe not so much anymore, they increased price), Xigmatek 1283 + bracket if you feel you need it for mid, and Thermalright Ultra 120 for high. Though last I checked all of thermalrights products were out of stock on newegg =/
