I normally have a difference of around 5 degrees between the CPU core temps reported in overdrive, and the CPU temp reported in PC probe. What I'm wandering is what do people refer to when they talk about maximum CPU temps etc. Are they talking about CPU cores or the overall CPU temp?

Get Core Temp, or RealTemp or HW Monitor first for your temp measurements. The Mobo temp sensing software is not reliable.

Core temps is what you need to monitor. Seeing 5-7C between cores isn't unusual and nothing to worry about. Higher than that you should reseat your cooler.
