Hi! I will buy a new PC in the next week.
What do you think about this?

Motherboard: Gigabyte GA-EP45-DS3 (or Asus P5Q? Which is better?)

CPU: Intel Core 2 Duo E8500 3,16GHz

CPU Cooler: CoolerMaster Hyper 212

RAM: Should I buy 2GB or 4GB? Im using 32bit Vista Ultimate.
4GB: CSX 4096MB DDR2 1066Mhz CEC FAN KIT
or
2GB: GEIL Ultra 2048Mb DDR2 1066Mhz KIT

VGA: Sapphire HD4850 512MB

HDD: Samsung 640GB 7200rpm 16MB SATA2

DVD burner: Samsung SH-S223F

PSU: OCZ 600W StealthXStream (or Corsair VX550W or Corsair PSU-520HX. Please help me to choose!)

Case: Thermaltake VI1000BWS M9

Please help me to choose motherboard, RAM, and PSU!

DDR2 800RAM and SATA for your burner and HD. Corsair 550w. Nice solid build

should i buy 2gb or 4gb ram? or 2x1gb + 2x512mb? im using vista 32bit

4 GB is better for Vista. Make it DDR2-800, it's enough and cheaper. You'll only see 3.5 GB, but every bit helps and it's still better than 3 GB.

Get a GA-EP43-DS3L and a Corsair 650TX, if you don't want Crossfire or RAID.

It's probably smarter though to keep the Crossfire option. The HD 4850 will probably be around $100 next year, and a second one would help you avoid other upgrades for a long time. I'd get a P5Q Pro and a Corsair 750TX.

Which RAM is better, if i dont overclock?
ddr2 800 or 1066?

800. It's usually cheaper, and you lose nothing since you don't overclock.
