SATA Harddrive Vs SAS

I want to create a Fileserver for about 60-100 users.
The HDD from Dell or HP price is high.
Can I install a Seagate barracuda 7200.11 1 TB in a Dell server.
What are the bad consequences and what are the proposal instead of this ?

Does it really differ to use the seagate Barracuda 7200.11 ES.2 ?

Can I make the first two HDDs as RAID 0 with 2 X 63 GB SAS 15K and RAID 5 or 6 the rest ?
Will that make performance better ?

Users use this server as their homes for Linux, and they use NFS to get their homes and also to open EDA tools such as cadence and mentor graphics tools But they use their workstations for their processing power.

Nothing happens on server except NFS.
