Am I able to run (in my case) two 8800GT's on say an AMD 780 or 790 motherboard (two PCI-e obviously).

What you need is Nvidia 780a, 750a chipset, that can run SLi with AMD processors.

The only way you can do it is with hacked drivers. Of course these drivers have numerous issues, and are built from earlier driver revisions so they don't have the newer bug fixes and optimizations.
