The price is close enough to were it wouldn't make a difference, which one is more stable and a better board?

That should have all the info you need. I think it will come down to preference in the end since they are close, but it looks like the Asus board has a slight edge.

I've read that article already and it's great, but it compares the ASUS P6T-Deluxe against the Gigabyte GA-EX58-UD5 and not the Gigabyte GA-EX58-EXTREME.

I believe that the EXTREME and the UD5 are nearly identical, at least from everything I can find, so the comparison is still a good place to start.

I think the EXTREME comes with a large heatsink/cooler (gimmicky for watercooling) for the to board. Besides that, I think they are about the same.

I agree - the colors are a little rough on the Gigabyte board.
