I've had to do a hard reset/wipe for about the 8zillionth time on my
Treo600, and I'm sure it's because of conflicts I've been having for some
time. So, I want to start fresh-ish and not put back everything. BUT,
there are things I do want to restore. Is there any way to pick and
choose? When I run it just gives 2 options, backup or restore. Can
anybody help?

There should be an "advanced" option somewhere which allows you to select
files. When you're finsihed revert to "basic" mode. Are you restoring from
desktop or card?

IIRC the free version only does complete restores, but the paid version
allows selective restores. I use BackupMan, which allows selective
restores. There is no free version, but you can get a trial version, and
registration is only $10, and well worth it.

While the free BackupBuddy does not allow selective restore, it conveniently
puts the memory files in a single backup folder on the SD card. And that allows
you to then selectively restore them from that backup folder with a (free)
program such as Filez. Perhaps that workaround is one of the reasons that they
don't provide the free version of BackupBuddy any more...
