I have a quick question about what I'm doing wrong.

I'm OC'ing for the first time with an E8400 on a P5Q Deluxe

I'm using http://www.newegg.ca/Product/Product.aspx?Item=N82E16835103046 for a Heatsink. I have AS5 for thermal paste.

Case: Antec P193

I have the CPU at 3.6Ghz but under full load I'm getting temps of 60 degrees +

in the BIOS I still have CPU voltage on Auto.

I'm using CPU-Z, HWMonitor and Prime95 for my testing.

Any assistance would be appreciated.

jsc is right, your mobo is probably giving your E8400 to much voltage, you'd be much better off setting it maually.
60C is fine if thats the temp under stress testing using Prime 95 or OCCT. I wouldn't go past 68C just to be safe.
That cooler you have isn't amazing, If you want better cooling have a look at a Tuniq tower 120 http://www.newegg.ca/Product/Product.aspx?Item=N82E16835154001

Or a thermalright ultra 120 extreme OR a Prolimatech Megahalems
