I need to RMA my WD 6401AALS hard drives because they click:

Can I transfer my Raid 0 configuration of both drives onto another drive non-raid?

You could use backup software, e.g., Acronis, to back up your volume to another HDD, then make a recovery CD to use in restoring it to you new RAID0 volume after your new HDDs arrive.
