Intel 40 GB X25V

I am trying to build a computer for photo editing.... Mainly Photoshop and Lightroom. And need some help.
I was thinking getting 4 Intel 40 GB X25V using 1 for the OS and then RAID 0 for remaining 3 scratch-disks. Would this work good or should I get larger SDDs and not raid them like the 80 GB X25 M????? I was hoping to spend 400-600 on SDDs
Any Suggestions would be appreciated??????
