[Help] Ram/cpu OC on xfx board

Hey guys.

I am pretty new at building custom computer (it's my first one in fact) and I have difficulties with it. I recently change my mobo for a xfx 750i. Here is my system:

CPU: e6850 (3ghz base clock, 1333fsb)
CPU cooler: H50 with single fan setup.
Graphic: 2x8800gt sli with both Vf900
Mobo: 750i from XFX with lastest BIOS
Ram: Cosair DDR2-6400 800mhz jedec (5-5-5-18-22-T2) or 1066mhz EPP (5-5-5-15-22-T2)
PSU: Corsair 950tx
Case: Cosmos S with 7 fans :)
Other: Fan controller, 2HDD (Velociraptor+Seagate 500gb) both Sata, 2 DVD drive.

I have two problems.

First off, I plan on ocing my cpu to at least 3.6ghz. 3.8-4 ghz would be awesome but I didn't want to get my hopes up. Now, I can't OC my system more than 3.4ghz and am I not even sure if it is stable. I pumped insane amount of voltage to run a small 67mhz upgrade on the FSB.
Vcore 1.505,
VTT FSB 1.45,
vNB 1.51,
vSB 1.60.
I disabled the small amount of feature in the bios and everything. Can't keep windows 7 running more than 2 minutes with 3.6ghz. What am I doing wrong ? Lower voltage won't let me boot at all !

Second problem, I heard about FSB holes on nvidia chips. So I wanted to try a different approach. So instead of using 400x9, I would be using 450x8. However, my board doesn't support EPP ram so my ram is running at 400 DRAM instead of 533mhz ! I tried overclocking it to 1066 mhz with the same timing and this one 6-6-6-22-28-T2 and I can't boot the PC at all. I don't even get to the motherboard logo screen. I pumped 2.2 volt and no luck. I tried ocing both the memory and the cpu at the same time. I'll let you guess what happened ... :cry:

So what should I do to be able to run 24/7 my pc at 3.6ghz with 1066mhz Ram ? Is my limited experience the problem or did I just get a bad board ? Or do I have just have bad luck when getting those component because I got the bad batch ?

I know that this cpu is a pretty good overclocker with a good cpu cooling unit. There most be something I'm not doing right. Plus, I can't OC the ram either on the board, which is pretty doable to !
