I am customizing my gaming desktop and have some questions about Nvidia Geforce 8 series vs their new 9 GT series video cards. Would it be better a GeForce 8800 GT 1GB 16X PCI Express vs GeForce 9800 GT 1GB 16X PCI Express for the price difference. And would it be better to geta SLI setup with 2 8600 GT 1GB 16X in stead of getting just one good video card? Also is it worth upgrading from a 512MB Card to a 1 GB?

Heya... Well how many graphic cards you need is all depending on what you want to do with your games, what resolution etc. Personally I have never seen a reason in dual cards, and now with cards such as the Radeon 4870x2 there is no reason to ever touch dual motherboards.
However, not everyone likes to play games on the bleeding edge, personally I have the Radeon 4850. It plays all my games including Crysis maximum settings in 720p on my HD TV.
For what you are looking at the 4850 Costs around the same or less then the 8800 GT, and it performs better. If you are not against ATI cards you should look into getting a 4850 over a 8800 GT. Also again ram depends on resolution.
Personally even if you wanted you could get a 4850 now, then when 4850x2 comes you can trade it in and get that to get even better performance, without going dual card.

SLI/Crossfire generally isn't worth it, as the performance gained by buying a more powerful video card is more consistent than buying a second video card and using SLI, as certain games don't support SLI/Crossfire and you end up using only one of the video card, while buying a new faster video will always have perfomance gains.

Usually no, as usually the video memory is usually regarded as a gimmick like those 8500GT and 8600GT's with 1GB memory, but there are some exceptions though, like the 1GB Radeon 4870.
