I have a brand new Sharp LC-32GA5U LCD TV, The picture is awful (out of
focus, fake color highlights, etc.). I can only assume, based on the
reviews of this model on CNet and elsewhere, that I have a sample that is
out of calibration. The repair guy comes on Tuesday to fix it under
warranty.
What should I be telling him to do? What is the correct jargon here? What
tools should he apply to the problem? I can see this being the kind of visit
where I need someone really good just to address the problem.

If the picture's that bad, tell him to fix it :-)
Don't be surprised if he says "Who's been fooling around with the
service menus, then?" :-)
