chipset doesn't matter

looks ok, if you want to OC, which will eliminate any bottlenecking get an e8600 and then OC that

also get a 4870 X2 if your dead set on it

but tbh... You don't need a 4870 X2... a single 4870 will do just fine, I have one and I can play crysis all high at 1920 by 1200... and you WILL NOT see teh benefit of having such a powerful card at any resolution below that

An E8600 will cost you well over $100 more for only an extra x1 multiplier (333x9 vs 333x10) - not worth it in my opinion.

You may not need the 4870x2 as suggested, but that is up to you and depends on the resolution you play at.

I would suggest a different HDD - WD 640 GB is a great choice.

The rest looks good.

I agree the CPU you have stated is most likely more than enough. I would agree with the previous suggestion also about the HDD. I would recommend the 640 GB HDD's aswell as they are a great value compared to your smaller capacity drives. Even if you go for a seagate 500GB with 32MB cache you will be getting more value for your money.

Graphics cards you dont really need to go all out something like a 4870 is more then enough. I have a 9800GTX and that is pretty good even for games like crysis. If you want to look for ideas on graphics cards try www.mygpu.info its got a list of reviews etc you may finding helpful.
Otherwise your system doesnt seem too bad if you don't get the 4870x2 or two 4870's then use the left over money to start saving for your next graphics card, rig upgrades or the antec 900 case.
But if you are dead keen on the graphics then go for it.

4870x2 since it has 2gig of ram compare to the 2 4870 with 1gig in CF. Also, get the Seagate Barracuda that has the 32MB cache.
