1. Depends on budget and how much space you need. If you mean a RAID array, then that would be moderately difficult, involve more money, and might help if you do a great deal of reading and writing to HD.
2. I have no idea. How much rendering will you do? A workstation card will have drivers that play much better with 3D modeling and other intensive tasks... Some programs won't play well at all with a 4870x2.
3. Yes, but the P5Q -E would be a better choice for overclocking. It also has eSATA and some other features you could use.
4. While the Sunbeam is the current king number wise, the Xigmatek S-1283 when attached with the optional bracket is a better choice. A bit harder to install, maybe... but once installed you will know it's on right. The push-pin system used by stock coolers and the Sunbeam are a big problem.
Or this mouse instead (It has a typo on the newegg website, Razer makes the DeathAdder with a Laser sensor, not an optical one. You can check that on www.razerzone.com if you want)

1.) It's not difficult, you just need to know what you're doing, for those that want the extra speed or just to keep your data safe, it's worthwhile. I honestly don't think it's worth bothering, but then again I don't criticize those that don't think equally.
2.) It would depend on the applications that you intend on using.
3.) Yes it can be very easily overclocked and yes your configuration will support overclocking rather well.
4.) GET A DECENT MOUSE. You'll thank me later, it helps a lot with precision, not only in gaming, but in work as well. The little CAD work I do, I feel pixel accurate over the experience that I get at school or with my old cheap mouse. (I have the Razer Diamondback 3G)
5.) Get this Heatsink if you want a performer that can rival even the Thermalright Ultra Extreme 120:

6.) Make sure that the TOC (Touch of Color) screen is something you want, I read on another TV-based forum that some people aren't very convinced about the Touch of Color TVs (6 series and above) over the 4 and 5 series quality. Granted, it's not a general consensus or even con, but it's enough to look into it to see if you'll like it or not, since it feels more like an acquired taste.
So the Zerotherm or Xigmatek is better then Sunbeam?
as for the 4870x2 what kind of programs are affilicted when it comes to that card? as for 3d rendering i only do it a qtr of the time and 4870x2 seems like the best bet since it is a good card for both rendering and games.
I guess im getting a little picky now i just want to make sure i got everything right
Im trying to keep this price as close to 2k as possible
