Just purchased New Hp-180-T Desktop with the new 6-Core Processor @ 3.33-GHZ ,
Hard Drive options- ?

Either- RAID-0 TWO SATA- 7200 RPM Drives

OR

A Single 10,000 -RPM DRIVE

Which HD set-up will provide the best over all performance / Speed ?
 
There is no single answer because it depends on what kind of performance you're trying to get.

For the best transfer rates, use RAID. That will let you copy large files faster.

For the best access times, use the 10K RPM drive. That will perform better when accessing lots of small files, as in booting or starting up programs.
