The Asus one is in a combo deal with the E8500 which I want to get anyway... so the price is about the same on both boards. (The gigabyte one is ~$20 cheaper AR though).

Yeah, so its going to be an E8500, HD 4870, Vista Home Premium 64 (Purchased), 2x2GB G. SKill PI black DDR2 800 (Purchased).

They are both great boards. I kinda favor the Gigabyte right now. The P5Q-E has been out since the first day of P45, and so you are more likely to get an older BIOS version.

Gigabyte board is brand new, so I would think the BIOS less likely to have issues.

Isn't it easy to flash the bios to a newer version? Bios aside, which board is a better buy?

Easy? Yes. Safe? Never.

Flashing a BIOS is ALWAYS a dice roll. If it goes bad, your board dies. It's a Russian Roulette kind of deal.
