on the Intel's ssd website

i see two descriptions of the same SSD model

1) Intel 80 GB X25M Mainstream MLC 2.5 Inch SATA II Solid State Drive (SSD) 9.5mm

2) Intel 80 GB X25M Mainstream MLC 2.5 Inch SATA II Solid State Drive (SSD) 7.0mm

what does the 9.5mm and 7.0mm rating stands for?

and which ones is the better as far as performance is concerned ?

Both are exactly the same base drive. The drive itself is only 7.0mm thick - the 9.5mm SKU comes with a shim so that it will fit snugly in a laptop drive bay.
