I've tried to research this myself but it seems like a toss up. Which is better ... a GeForce 8800 GTS 512 MB or a Radeon HD 4850 512 MB? Also... if I do the Radeon in Crossfire is that better than the 8800 GTS (which i think it probably would be)? But would it be worth it? What do ya'll think?

Well, the 8800GTS is the same as a 9800GTX. Its same number of shader units and what not, same G92 chip, though generally slightly different clock speeds. While the new nVidia drivers provide a good improvement for the G92 chip overall, the Radeon 4850 is the better buy especially if you want to use AA.
Of the two cards, the 4850 is the best.
The 4850 will out perform it, the higher clocked 9800GTX and still squeeze out a win over the even higher clocked 9800GTX+. As it can also be had for less than the others, $130 for the 4850 vs $150 for the cheapiest 9800GTX or 9800GTX+, it is a better buy.
I recently bought an EVGA 9800gtx (not the "+" ) from a friend for $80, and at that price it's a great card.
On the other hand, I don't think the 9800gtx or 4850 is worth $130+ when just two weeks ago you could buy a 4870 1gb or GTX 260 core216 on eBay for $165-180 with the live.com cashback promo.
