I have a Ultra ULT31847 X-Finity 600W Power Supply PSU
As of now I have 1 8800 GTS 512mb, with 2 160gb harddrives in RAID 0, with 1 cd-rom, and 1-floppy drive.
I have a EVGA 680I board with a E6750 cpu oc'd to 3.2ghz.

Could I add another 8800 gts 512, for SLI, or do you think I might get power problems?

I'd recommend a 650W, and something other than Ultra. Antec, PC P&C, OCZ, Corsair, Seasonic (if in a 110 area), or Thermaltake. Ultra have serious issues, you may think you have 600W, when you really have 450.
