I bought a separate case and motherboard, and when trying to connect all the cables, found my case has cables with temperature sensors for the processor, video card and hard drive. I'd like to connect them, but don't have a clue how. Help!

Welcome to the forums!

If the sensors are resistors:
I would advise you to tape the tip of the sensor to the top of the hard drive and to tape the other sensors in vicinity of the processor and video card.
I wouldn't recommend putting the sensor underneath the CPU heatsink, because it might affect the cooling of the processor.
If the sensors are electric wires, the setup may be different.
