I was going through some old computer parts and found two older sound cards. I was curious if they would perform better/take the load off of my dell desktop.

The on board sound on my desktop is
Sound Blaster emulation
Audio controller Analog Devices AD1885 AC97 Codec
Stereo conversion 16 bit (analog-to-digital and digital-to-analog)
Interfaces: Internal -
PCI bus/AC97
External -
stereo line-in minijack, microphone-in minijack, line-out minijack
on the rear input/output (I/O) panel; headphones minijack on
the front panel

Sound card 1 is a Creative Sound Blaster Live! CT4830

Sound card 2 is a Compaq 1373 PCI Audio Board

Would either of these two be worth using?

Probably not. Their maximum sound quality is worse than any decent onboard is capable of doing, and drivers probably won't exist for 64-bit OS's. Stick with the onboard.
