I will be running Vista 64 Bit. I already have a Antec 900 Case and a Corsair 750watt PSU.

Suggestions Welcome! Budget is around 1200. The list so far totals at 1073 so i've got some headroom. Thanks!

I also have an i7 in the mail...I get it today actually...and I got the same RAM. I was hoping for the OCZ gold but it went out of stock about half an hour before I bought it, so I went with the G.Skill. I hope there isn't much of a difference lol.

Thats a sweet card but i was thinking about picking up another 4870 a few months down the road and crossfire. Would that beat 4870's in crossfire?

Crossfired 4870s should give more performance, yes.

But here's the thing, one of the major additions of X58 was getting rid of the necessity of Nforce chipset to have SLI, and the results in SLI scaling are truly awesome. Check the Tom's review when they tried i7 with one, two and three GTX280s as well as one, two and four HD4870s about a month ago for more information, but the verdict was that SLI scaled so well without Nforce holding it back that every game (except Crysis for some weird reason) got huge gains with each extra card added.
That being said, if I were you I would buy a GTX 260 Core 216 now, and add a second for SLI in the future.

I was actually just checking out that article. I'm starting to lean towards the 260 216. And its even $20 dollars cheaper than the 4870 and with free shipping (newegg)
