I'm planning on spending big on my new gaming/development rig.

I have the EVGA X58 in mind, with 3x2 GB Corsair dominator, Core i7 Extreme, EVGA GTX 295, 2x Intel X25-M SSDs (RAID 0), 2x Western Digital Caviar Green WD10EACS 1 TB (RAID 0), and a simple DVD writer. 2x 30" Dell Flat Panels.

Can you have anything below 1000W to power this?

I do not recommend running anything <1000 watt's especially should you consider SLI, I run 3 way SLI with EVGA's GTX260's superclocked on this PSU:

You'd be fine with something like a Corsair 850W, unless you wanted to add a second 295 at some point. If you want to run quad-SLI, I'd lean towards the Corsair HX-1000W (I'm running 4870 quadfire on an i7 with that PSU), but if you don't ever intend to add a second GTX 295, I'd go for the Corsair 750 or 850 (probably the 850).
