Another Psu Question

Suppose you have a overkill, what is happening the power that is not being used ?

It is not drawn from the wall outlet. A psu may be rated at a maximum of 1,000 watts but it will not draw that much power from the wall outlet if the system is using a lot less. The psu will only draw enough power to satisfy actual requirements.
