If capacity is not an issue for you, I'd suggest the Caviar Black 640GB instead of 750GB, because the 640 is faster due to its higher platter density over the 750.
GTX 285 will be priced at USD $400, on Jan 15. Not sure if you want to factor it into your plans (or if you can wait), but the "clear out deals" on the GTX 280s right now are a pretty good value. Just make sure that you can do the step-up from 280 to 285 (i.e. read EVGA's step up plan very carefully first).
GTX 285 also has the advantage of running cooler because of its die shrink, so if you want to SLI in the future, it will help you on the cooling aspects.
As per kubes, not sure if you already have that PSU, but I'd go with the Corsair 850TX--single rail, all you need. Only get the 1000HX for tri-SLI purposes, but of course your P6T Deluxe cannot run tri-SLI for dual slot video cards anyway, so the 1000HX is not money well spent.
