I was wondering if I could get some input on it, and if anyone had any suggestions on some different choices for a motherboard, monitor, case, and speakers as those are the parts I'm not so sure about if I really want that specific one.
I'm also thinking of going with a 4870 x2... if anyone has had any experience with them or has had any good or bad experience with different models of the 4870 I'd like to know.

Thank you for taking a look.

well, the 4870x2 is an excellent value right now at around $400. However, even if you go with a 4870x2, your psu is overkill. You would do fine w/ a quality 750w corsair, or an 850w if you wanted a lot of extra headroom for the future.

4870X2 sounds great and I think you should get that as well. Anyway, are you sure 150GBx2 is enough for you? Try going for at least 320 or 500GB. That PSU is a bit too much though. 750w should do fine

With the PSU would a 750 watt be good enough for going double or even possibly triple crossfire at a later point in time?

A 750W watt is fine for a single HD 4870 X2 or for two HD 4870 1GB cards.
For two HD 4870 X2 cards I'd pick a Corsair 1000HX.
For three HD 4870 1GB cards I'd pick a Corsair 850TX.

I've read the articles on best single 4870 card manufacturers, but was wondering if anyone knew of much difference in 4870x2s.
