It probably has profiles for each CPU that can be used in the board, that add generous amounts of voltage to slight increases in CPU speed. There is the chance that it monitors heat and stability some how, then adjusts the settings on the fly.

Either way, I would never ever ever ever trust an auto OC feature to find my max, or even daily OC, especially if I was running a $1000+ cpu like the 980x. I don't care who the manufacturer is, the uncontrollable variation between even the exact same chips requires an attentive approach to OC safely and effectively, and I just don't believe a Mobo could be smart enough on its own to do it right.
