Dual 500s or a 1TB

Hello fine gurus, I'm piecing together a computer for my home, and I've run into a question. Should I use two of these: http://www.newegg.com/Product/Product.aspx?Item=N82E16822136320

or one of these: http://www.newegg.com/Product/Product.aspx?Item=N82E16822136533

My MOBO supports SATA 6GB/s and I'd figured I'd just go with the fastest drive possible, but will striped 500s at 3GB/s perform similar? I'll be using the PC for gaming and basic picture and video editing, and basic pc usage (web browsing, file shares). I won't be putting a TON of files on it, but I guess that is a possibility. I really like my current setup at work: a 250 3GB/s for OS and a 500 3GB/s for storage. What do you guys think would be the best route for storage, while keeping the budget under 150$?
 
I would personally shy away from RAID 0 unless you're willing to put up with the extra risk of failure and data loss and stick with just one 1TB drive.

But if you're doing video editing you might benefit from two 500GB drives if you can split your directories up so that the work files are on a different drive than the input and output files are.
