I have one question to ask. The motherboard I chose saids it uses DDR3 1600/1333 as a standard will it be compatible?
I've ask someone from Frys and he said I might have to flash my bios and then I thought what if the flashing process fails, but the employee looked and sounded as if he didn't know a thing about motherboards.

Yes, the memory works very will in general with both the X58 MOBOs from EVGA. The important part of your OCing will be your CPU and memory controller.
