Making large numbers of mp3s

Besides the several hundred music CDs that our family has acquired a friend just gave us a bunch more. I want to rip them to both .flac and .mp3 and store them on one of the new and realtively affordable NAS hard drives. I also want a new desktop soon.

So my question is --

If I get a machine with a quad core processor with 64 bit windows and 6 or 8 gigs of ram can I run multiple copies of EAC and or lame and do the conversions more quickly?

Lame sees a pretty much linear increase in speed in a multicore setup, so it'd be just as fast to convert everything with 1 instance than having 4 instances open.
