OK,

I looked and for like 5 bucks more i got the GTX 285

I prolly did get a little greedy on the RAM...lol so i went down to 6GB and got 2 of the Black Caviar disks.

I plan on doing a RAID set up, is that the way to go?

It depends on the raid setup you are thinking of and what you will use your PC for. Raid 0 is best for gaming, But I wouldn't recommend doing it unless you have a backup disk to save your data, Raid 0 has 100% greater chance of failure than a single disk. If you want Raid 0, pickup the Caviar Black 1TB drive as well for storage, and run the two 640gb in raid 0 for the system and apps.

There has been some talk about i7 not doing well with single card Nvidia setups. Might be worth looking into dual HD 4870's or GTX 260's, i7 does terrific with multicard setups.
