It doesn't work at stock speed (1066). This jump out at anybody? It passed memory test and runs like a charm at 800mhz but if i can't even get it to run stock, i'm not so confident its going to overclock later you know what I mean?

Here's the settings, exactly as they should be set according to everything i've read in the last 3 days and the G Skill administrators (telling other people w/same gear in gskill forum) recommended settings.
FSB: 333x8
Performance Enhance: Standard
XMP: Disabled
MCH Freq Latch: Auto
What are the SPD tables (you can use CPU-Z to view them)? Why did you disable XMP if you want to overclock the memory to 1066 MHz? Using the XMP profile should make it a lot easier.
However, i've been brainstorming on this... is it possible to have compatible memory that can't run at its stock speed unless the FSB is overclocked to catch up? Eg. my fsb is 333, my (stable) RAM speed is 400mhz(x2=800). When I put my ram speed to 533 that creates a difference of 333 : 533 - could this cause my BSOD? Ratio too far off? I'm a noob so, some things I haven't learned yet.

1066 MHz DDR2 memory usually is DDR2 800 MHz that should run when overclocked to 1066 MHz. Post the SPD tables and tell us if your modules have an XMP profile. If they do, then set the voltage required by XMP, enable the XMP profile and leave the rest on Auto. That should work. I know that motherboard works very well with 8 GB of memory at 4-4-4-12 timings and 1.9V using G.Skill PI Black.
Ahhh i think i see what you're talking about. See these are the things I wanted to learn by building this system. Glad I did it. Here are the tables. Correct me if i'm wrong, shouldn't memory SAY that it's 800 standard 1066 OC if that's what it is?
There is no such thing as stock 1066Mhz, all DDR2-8500 is 800Mhz Ram designed to run at higher speeds with voltage and timing increases. If you want to run your Ram @ 1066Mhz you have to change your timings and up the voltage to 2.1v (use the SPD tab as reference when you change your timings).
Don't forget to raise your frequency from 400Mhz to 533Mhz if you want to run them @ 1066Mhz

Aight here's an update: it still wont' accept any of these suggestions, and I tried the first jump on Gigabyte's Easy Tune 6 and I could noooot get it to post for 20 mins after that. Sooo... I dunno what I'm gonna do but this thing is kicking my butt.
As you can see in the SPD tab, your modules are DDR2-800. If they run at 800 MHz, 4-4-4-12 timings and 1.9V, then they'll be almost as fast as DDR2-1066 with looser timings.
I run my G.Skills (PC2 6400) @ 4-4-4-12-24-2T / 1.9v and they are faster than my OCZ (PC2 8500) Platinums 1066Mhz @ 5-5-5-15-26-2T / 2.2v ......That has a lot to say about 1066Mhz modules.....

I also run 8 GB of G.Skill PI Black at those settings on my GA-EP45-UD3P and it's stable. I'm fairly sure that Erwin's modules would also work at those timings and voltage.
Thanks for the input guys I really appreciate it. So now let me ask you this: you're running 800mhz before overclock? Or total? Because if I want to OC this in the future (which could be a while and a few lessons later since I apparently have NO idea how to do it) I'd like to know that the parts I have will work. Only important parts not listed up top is my 2 x XfX HD 4870's and my PSU is a Corsair TX650W.

Start off @ 800Mhz and go from there.... You are new to this and you have a lot to learn... Once you have a stable system, let us know what exactly you are looking for and we will show you what to do....
It's stable at 800mhz. That isn't a problem. I've been playing some games on it, watching temps, benchmarking, etc. I just assumed earlier that cpu should run at stock speed and RAM should run at labeled speed. But I was n00b =\
Oh and speaking of temps I want my GPU fans (HD 4870s) to run faster than their default minimum which maintains ~61C. I don't like that. I think its too hot. But then if i manually override with catalyst, it will go that speed and only that speed. What overrides catalyst fan speed and does it well?

Yea, that's what it was designed to do.. You raise the fan speed when you game to lower temps, and then you lower the fan speed when you are not doing anything related to the GPU. Ex: surfing, downloading, creating cd-dvd's, etc.....
I use Ntune which is similar to catalyst but made for Nvidia GPU's...
