what would be faster
two 260 gtx's in sli or one 285 gtx?

For most cases, the SLI setup, assuming your resolution is high enough. Did you really mean the GTX285 or the GTX295? The GTX295 would be faster as they have the same memory, but the GTX295 has more SP.
