I assume any ddr3 240 pin ram will work on this? So even something like this would work?

that will work but is a waste unless you plan to overclock

These are the speed your mb supports and do notice the OC next to 1600 for overclocked
DDR3 1666(OC)/1333/1066

So I can use a 1600 overclocked to 1666?

or a higher ram clocked down.
